Night porter
Key accountabilities & responsibilities
Kitchen
Receive, check and store all kitchen deliveries, logging temperatures and reporting any discrepancies to the Head Chef. Ensure the pot wash area runs smoothly and efficiently during all service periods.
Clear, clean and store all crockery, cutlery and equipment used during service.
Assist the chefs with food preparation as required.
Ensure kitchen is cleared down, clean and secured at the end of each service period.
Prepare packed lunches are required during the night.
Remove rubbish at end of each service period and dispose of in the correct manner.
Reception/Public Areas
Answer the telephone in line with company standard.
Ensure a presence during the night to assist with customer queries/return keys/order wake up calls etc.
Provide hotel/resort information as required to customers.
Ensure all public areas are kept clean and tidy.
Ensure public toilets are cleaned at regular intervals during the night.
Carry out wake up calls as necessary in line with hotel procedure.
Restaurant/Bar
Ensure the restaurant is cleared from dinner service and floor is mopped / hovered.
Complete restaurant set up ready for breakfast, ensuring urns have been switched on and buffet is laid out.
Clear bar/lounge area of any remaining glasses and cups and ensure all ashtrays have been emptied.
Remove any rubbish from restaurant and bar and ensure it is disposed of correctly.
Health & Safety/Fire/Security
Ensure security walks are completed around all areas of the hotel at regular intervals throughout the night.
Ensure all fire doors are closed and fire exits and escapes are kept clear of hazards.
Clear the snow from fire exits and escapes around the hotel.
Ensure the hotel is secure during the night and all doors are locked / secured where necessary.
Communication.
Keep Hotel Manager and Head Chef informed on all relevant issues occurring during the shift.
Escalate or communicate to Hotel Manager all issues deemed fit or which cannot be resolved locally, or, which will have high customer/financial impact.
Attend staff meetings on a weekly basis to review & improve performance.
